Venison, locally sourced from our award winning free range wild game supplier, Blackmoor Game Farm, takes the starring role on this month?s On the Menu.
Popular in the UK for its distinctive flavour and high protein content, the venison is accompanied with a smooth red cabbage and apple purée to help refine the flavour of the overall dish.
The charred leeks, with their slight bitterness, combined with the richness from the classic pommes Anna help to balance out the purée. The dish is completed with salsify, which is confit to remove the bitterness.
The lean venison is low in fat and full of flavour, making it the perfect choice this Autumn.
