On the menu – Peach Melba
Aviator?s Pastry Chef, Greg Cadoni, shares with us one of his stunning new creations.
The centre piece of this delectable dish is a peach dome created from peach mousse with a raspberry sauce insert covered in a peach glaze and sat on an almond wafer disc. The dome is encased into a sweet pastry case filled with peach compote. The dish is completed with a selection of raspberry and peach infused elements, showcasing a modern twist on an old favourite.
When asked his inspiration for the dish Greg said, ?I?m a flavour man; it?s all about the flavour!?
