In the cellar – New Wine List
It gives us great pleasure to introduce our new wine list to our guests.
A collaborative project between Philippe Larue, Managing Director of l?Art du Vin, and Aviator, the new wine list was designed to offer our guests a more eclectic and comprehensive range that features wines from all corners of the globe.
" In my opinion, particular stand-outs include the Gavi di Gavi from the Tenuta Carretta estate in the Italian region of Piemonte. A recent visit to meet the winemaking team there confirmed my love for this indigenous grape – and this wine in particular!?
Another personal favourite is Jonathan Pabiot’s Pouilly-Fumé from the Loire Valley. We have been fortunate to have worked with Jonathan for a number of years, during which he has risen to the forefront of the French wine scene. As his reputation improves so do his wines and this particular vintage of Pouilly-Fumé is no exception – a wonderful expression of Sauvignon Blanc with beautifully clean citrus notes and an elegant mineral finish. "

Within the selection, we have concentrated on sourcing wines from small, independently owned estates, many of which practice organic and biodynamic principles. Our new wine list is available now, in our award winning Brasserie.
